Salads with Options

This is an ode to one of the restaurants I miss the most in NYC (Chop't) and my favorite lazy summer options. Because some days I'm just spent. I'm just way too tired to do much. But unlike winter when I crave something hearty, light dinners are my favorite in the summer. Especially with all the fresh ingredients, you can get. And around here that means salads. No fuss...little mess and no guilt (literally and figuratively). Salads are also great group meals. The purple cabbage and broccoli salads can be made ahead, and chopped salad ingredients can be prepared in advance. Chopped salads, or $12 salads as I call them, are my favorite. I call them $12 salads because that's how much I used to spend when we lived in NYC for these delectable salads. They used to be one on almost every corner in Manhattan and they had almost every ingredient you could think of. I've listed some of my favorite chopped salad ingredients. They can mix and matched for maximum deliciousness.  

Chopped Salad Options

Lettuce: mixed greens, romaine, red leaf, green leaf, spinach, arugula, cabbage, Brussel sprouts,

Veggie mix-ins: tomatoes, mushrooms, corn, peas, onions, cucumbers, sweet peppers, avocado, artichokes, beets

Fruit Mix-ins: margarin oranges, apples, pears, grapes, strawberries, peaches

Additional mix-ins: olives, tortilla strips, wonton strips, fried onions, walnuts (plain or candied), peanuts, sun-dried tomatoes, croutons

Protein: Egg, (Veggie) chicken, fish, black beans, pinto beans, garbanzo beans, 

Cheese: Feta, Pepper Jack, Gorgonzola, Cheddar, Parmesan

Depending on what's in my salad, sometimes I skip the dressing. But I mostly make my own, which can be found here. Most dressings, as I'm sure you are provably aware, are where most of the calories in a salad come from. Anything creamy or sweet is usually loaded with everything to counteract having a salad. 

Purple cabbage salad

2 cups of fresh (purple or green..or both) cabbage, shredded

1/4 cup of raisins

1/4 cups of carrots, shredded

1/4 cup of walnuts

Scallions to garnish

Dressing

3/4 cup of mayo

2 tablespoon sugar

2 tablespoon vinegar

Mix up dressing and let it sit in the refrigerator. Cut up salad ingredients and mix with dressings. Serve immediately or chill until ready to serve.

Broccoli salad

3 cup fresh broccoli florets

1/2 cup cashews, salted or candied

1/4 cup of shallots

1/4 cup of golden raisins (or craisins)

1/4 cup shredded cheddar cheese (optional)

Scallions to garnish

Dressing

3/4 cup of mayo

2 tablespoon sugar

2 tablespoon vinegar

Mix up dressing and let it sit in the refrigerator. Cut up salad ingredients and mix with dressings. Serve immediately or chill until ready to serve.
